Rae’s creates experience-led dining designed to connect guests with Scotland’s landscapes and larder. Each experience invites guests to explore Scotland’s culture, history, people and sense of place — through what is on the plate, who is gathered around the table, what fills the glass and the setting in which we dine.

Every detail is thoughtfully considered by the Rae’s team, from floral arrangements and fireside tablescapes to meet-the-producer moments and immersive storytelling throughout the experience.

Imagine lobsters served on the dunes while watching the creel boats land tomorrow’s catch; learning the lay of the land from a geologist and forager before tasting the forests with our chef; or gaining rare access to a remote Highland bothy on a private estate, where an exceptional meal awaits at the end of the journey.

While each experience feels wild, remote and deeply connected to nature, guests are always cared for with thoughtful comforts — seamless logistics, parking, facilities and elegant wet-weather alternatives.

Foraging Walk &
Outdoor Cookery

An immersive outdoor dining experience rooted in season, landscape and wild ingredients.

Together with a local foraging expert and geologist, guests explore the Angus countryside — discovering seasonal herbs, berries and wild ingredients — before gathering around the fire for an open-air cooking experience led by Chef Wout. Designed to feel relaxed, sensory and deeply connected to place.

Lobsters at
Lunan

A coastal dining experience set against the wild beauty of Scotland’s east coast.

Guests dine nestled in the dunes by the sea while locally landed lobster is prepared over fire and served alongside buttery coal baked potatoes, garden salad and carefully selected wine. Designed to feel atmospheric, intimate and uniquely Scottish.

Hearth

An intimate winter dining experience set deep within the Scottish Highlands.

Guests journey across the snow-covered Rottal Estate before arriving at a historic bothy for a candlelit dining experience — centred around fire, storytelling and seasonal Highland produce. Pairing refined cooking with atmosphere and place, Highland Hearth is designed as a deeply immersive and memorable escape.

Cookery Class

A hands-on Culinary Experience celebrating Scotland’s seasonal produce and relaxed, immersive dining.

Led by Chef Wout, guests are guided through the preparation of a carefully curated three-course menu using locally sourced ingredients from the Angus larder. The experience concludes around the table with paired wines and the opportunity to enjoy the dishes together.
